Sweet potato cakes – modified recipe originally by Deliciously Ella

Hello everybody 🙂

Recently I’ve started to be a bit more experimental in the kitchen. I’ve always loved to bake (as a kid the best thing ever was to put just any ingredient I thought might taste good into a bowl, not caring at all if someone else finally liked the cake or not and of course, leaving half of the cake mass in the bowl to eat it straight away – I remember the warning voice of my mom „but there are uncooked eggs in it!!!“ :D). but the last couple of years I lost the motivation and the few times I really cooked a real menu got less and less. I still prepare something warm every evening but quite often it turns out to be more or less the same every time. It was just recently when I realized how boring my life had become – I mean, I go to university, I meet my friends a lot, I hit the gym 3-4 times a week and so and on, but the more I thought about where I wanna go and what I really love in life I realized, that I got a bit stucked: I’ve always been a very active person and I get bored far too fast, so having a daily routine where everything is planed in ahead, not allowing myself to stray away a bit and trying out new things, doesn’t make me happy at all. What does this extremely long introduction have to do with the sweet potato cakes I gonna show you in this post? I strongly believe that all the changes lie in the small things: so cooking a „real meal“ that needs a bit more attention and preparation in ahead (not because it’s a complicated meal, but because I need to buy the ingredients!) is a first step towards my aim of trying out more new things and staying open and curious for all the unknown that might come.

So here we go with the recipe of this sweet potato cake. You can find the original recipe on the website of Deliciously Ella. I slightly changed it because I don’t really like coriander and cumin, which you’ll find both in Ella’s recipe. So if you like these ingredients, head over to her page.

Ingredients for 1 cake

For the cake

  • 1 sweet potato
  • 1/2 glove of garlic
  • juice of 1/2 a lemon
  • some leaves of basil
  • 1/2 tsp of tahin
  • 2 tsp of tomato sauce (I used pizza sauce) – If you wanna go healthy, check if there are tons of sugar in it or not
  • salt and pepper

For the spinach

  • 1 bbsp of olive oil
  • spinach
  • dried cranbeeries, chopped walnuts for some good favour


  • 1. Preheat oven to 200 degrees
  • 2. Peel the sweet potato and cut them into cubes
  • 3. Place the sweet potato cubs in a pan and steam them with some water untill they are soft (15-20 min)
  • 4. Meanwhile: sqeeze the garlic, cut the basil leaves into small pieces
  • 5. Mash the sweet potato cubes with a fork (don’t put them into a mixture, they shouldn’t be completely soft) and mix the tomato sauce, tahin, garlic, basil, lemon juice, salt and pepper with it
  • 6. Put the mixture into a baking pan or form a cake by hand and put it on a baking sheet (this way you don’t have any troubles with getting it out of the cake form after baking)
  • 7. Strew some flour on the top – makes it crispy – and put it into the oven
  • 8. While the cake is baking, sautĂ© the spinach in a pan with some olive oil
  • 9. When the cake is finished: take it out of the oven, place the spinach on the plate, sprinkle some chopped walnuts, dried cranbeeries (whatever you like: you could also place some avocado on the spinach bed) and put the cake on top of it
