Chickpea and chicken coconut stew – inspired by Madeleine Shaw

Hey you all 🙂

another week, another dinner at my place:) I think for the first time ever my sister (the one I’m living with) affirmed my question if she wants to eat with me and my friends – normally she never likes what I cook haha. So the pressure was real;)! I really want to improve my cooking skills and therefore never cook something twice when I invite friends. That involves the danger that something might not turn out the way I expected it! :O But I try not to stress about it and instead always dish up some good bottles of wine – we all know that 1 or 2 glases help to make everyone happy (so they may not even recognize that your chicken is „VERY WELL“ cooked;) ). Talking about wine – since my friend Rebecca gave me a bottle of RosĂ© for my last birthday – at 7 o’clock in the morning, just before we had one of the biggest exams at uni – she is my „RosĂ©-expert“ and responsible for bringing (thank you again my love) or recommending the right ones. So if you are also that much into rosĂ© wine like we are and if you like the sweet ones I highly recommend Barefoot White Zinfandel – that’s the one I got from here and it’s soo good ;). With saying that I’ll end todays post and get ready for my friends christmas apĂ©ro.

Ingredients

  • 400 g chicken
  • 3 dl coconut milk
  • 300 g chickpeas
  • 300 g mushrooms
  • 1.5 garlic gloves
  • 1 onion
  • olive oil or coconut oil

Instructions

  • 1. Heat up the oil in a pan (you might need 2 pans)
  • 2. As soon as the oil is hot, put in the chopped onion and the pressed garlic gloves
  • 3. SautĂ© the onion and garlic and mix in the chicken
  • 4. Roast gently the chicken for about 5 min and remove from the pan
  • 5. Set the chicken aside
  • 6. Use some more oil in the same pan and stir fry the mushrooms
  • 7. Mix in the coconut milk
  • 8. Add the chickpeas – you can use the canned ones or fresh ones which you soaked in water for about 12-14 hours
  • 9. When everyone is ready for dinner, mix in the chicken and let it cook until the chicken is well cooked (maybe another 3-4 min)
  • Explanation: I would remove the chicken and mix it in at the end because otherwise it might get very tough…
